Before 1871 the region was Prussia; after and through WW I it was Germany through the unification of several German States.
Running from potential military service is a common reason for migration but stories about being smuggled aboard a ship are a dime a dozen. Even if true, it wouldn't generate enough interest for a story to be researched.
What parish records have you researched in the places they lived? I haven't looked specifically but lots of records for West Prussia are available on microfilm through Family History Centres.
