Doing a quick search on where there may be Jewish records for those who lived in Minkowce, all I can find is 1935 for Sokolka microfilmed by the LDS. I don't know if there was one closer in Belarus, since this is right on the border with that country. Belarus was part of Poland when your ancestors were born. The archives in Poland show nothing for Sokolka.
You may want to try http://www.jewishgen.org to see what they know about records for this area.
