James MAYS, wife Sarah in Grayson Co, TX 1880

Who was James MAYS's family?

1880 census: Precinct 6, Grayson Co., TX
MAYS, James b: abt 1855 Missouri
MAYS, Sarah b: abt 1860 Georgia
GRAY, L b: abt 1844 Indiana {hired hand)

I am trying to identify the family of my great-great grandmother Elizabeth MAYS, who according to the census records for her daughter, would have been born in TN, but would have been living in Sherman, Grayson, TX with her husband and children in the 1880's and part of the 1890's. I have no birthdate for her because I have never found her on a census record and I don't know who her family was. She was married to Lafayette GRAY b: abt 1846 IL, and this would have been his second marriage, so I expect Elizabeth was a younger, maybe born in the 1850's or later.

On the 1860 census for Humphreys Co., TN, it lists a Samuel Mays 23, wife Sarah 20 with a daughter Elizabeth, age 2, son, James 1/12 and other children. Wright Mays 55 and wife are living next door.

1870 census, same location, Samuel 33, wife Sarah J 29, Elizabeth 11, James 9 and other children.

1880 census, Samuel has a wife Elizabeth age 20. At first I thought this was a mistake and was his daughter, but in 1900 he still has Elizabeth as his wife. James is not listed either.

What happened to daughter, Elizabeth? IF this is my Elizabeth, may have been married by this time? I believe my Elizabeth had a son by 1882, and my great grandmother was born in 1886, Sherman, Grayson, TX.

I think my Elizabeth "Mays" GRAY might have died in 1896 but am still working on verifying it, so she is not on any of the later census records.

I know this is a longshot, but I am not finding many other possibilities.
Thanks for any leads/information/help anyone might be able to provide.
