The version I have been told is that it is a derivation of "Hibbos" (pron. Ibbos) which is Greek for horse.

According to my family folklore the 'O' was dropped (and H pronounced) when my great great grandfather moved from Jersey to England.

Ironically, he evidently ran a horse and cart taxi service in Jersey called "Hibbos taxis" and the company is supposedly running today.
