What a great find!!
Yes, I think Stella, Georgia and Lissie are sisters. Born after the 1880 census, I think they are the children of James M. Sr and wife Martha F. Ham.
I did a tiny bit of research yesterday, but didn't find as much as you did. I did try and find an 1890 census or 1900 for James Sr and Martha Ham - no luck. I'm just guessing, but if Georgia is the youngest (born Nov 1884), they may have died prior to the 1890 census, and youngest children are living with relatives.
I received an e-mail from a Glen Ham stating Mary Lou Ham had Hubbard relatives. Mary Lou, James Jr., and William A. Ham were probably older siblings of Stella, Georgia, and Lissie. I also saw a message that Georgia Ham lived close by a relative named Henry Ham. William A. Ham, (prob. Georgia's brother) had a son named Henry. They are living almost next door in a 1910 Matagorda census. It also states that John Kirby had siblings, Docia, Louisa, Suzie and Jeff - so all that fits.
Yes, I can see that Marie L (Louisa) Ham is Susie's first born. It's a little confusing that Susie is listed as a Kirby (when she's married?). I assume that Mattison is her husband James M. Ham, Jr. They had a son they named Mattie David Ham (prob. where the Mattie comes from). Also it appears that Marie Louisa's middle name came from her Aunt Louisa.
By the way, Susie Kirby's mother name was Marilda Jones. At first, I thought they misspelled Matilda, but it is clearly an "R" and not a T.
I fit into this Ham family twice, once through Mary Lou Ham (my great-grandmother), and then James Jr and Susie Ham were my step-father's grandparents. I was wondering if or where you are connected to this family?
One more thing, not sure if I mentioned this before.
Johnnie Edmon Ham's brother, Mattie David Ham married Esther Elisabeth Richards. She and Mabel Edith Richards are sisters.

v. JOHNNIE EDMON HAM, b. Abt. 1910, Texas; d. 10 Sep 1961, Galveston, Tx married Mabel Edith Richards.
vi. MATTIE DAVID HAM, b. Abt. 1911, Texas; d. 22 Dec 1994, Houston, Tx married Esther Elisabeth Richards.
vii. R F HAM, b. Abt. 1915.
viii. M J HAM, b. Abt. 1918.
ix. H H HAM, b. Abt. 1920.
