Dit names are nicknames - like the Viking, Eric the Red. These nicknames were given to separate persons of the same name, and/or because it was fashionable. Soldiers almost always had nicknames - you know, the male testosterone thing. In time, the nickname frequently replaced the REAL surname because family members did not understand the older customs, and/or because English-speaking American beaurocrats just wrote down the last name they heard during census, or property transfers, or last wills, whatever.
There are a number of good web sites discussing dit names. Do a web search for "dit" and read a couple of them.
