It does appear that you are on the right track as to who the parents of Henrietta Snell was (Tipton County, in the western district of TN)- but I see no evidence (other than an old family rumor) that they were Cherokee Indian. There is no record that her Snell family had ever lived within the Cherokee domain- east or west.

It appears that Henrietta was born in Tipton County TN, and is shown at 6 months of age, with her parents (John and Elizabeth) and siblings, on the 1850 census of that county. In 1860 her family was shown as family #317- Prairie Co AR. By the 1870 census, they had lost their mother, but John and the children who were still at home were shown as family #199, living in Pulaski Co AR.
